Well, it depends on the language of the so-called "gift affidavit." The words "gift affidavit" mean nothing. What you will be signing is some sort of contract, so it all depends on what the terms of the "contract" are. If the contract is that you will be "guarantor," then you are responsible for whatever rent you daughter is legally obligated to pay, but fails to pay.
References :
If you daughter can not afford the apartment on her own, the landlord...if he's sane...will require you to either sign the lease or sign as a guarantor. A gift affidavit will not cut it.
References :
You can't be responsible for the lease unless you sign it, which I expect they will ask you to.
References :
As Cabal says, houses to rent in Paris are really almost inexistent and extremely expensive.

The best site is the one that Cabal mentioned, Se Loger, though it's only in French.

What you're looking for is "location meublée""location de courte durée".

The website of the tourist office of Paris gives a complete list of estate agents specialised on furnished short term rentals.
http://en.parisinfo.com/paris-hotels/furnished-rentals/

Then, two good estate agents, with English website and doing short term rentals :
http://en.century21.fr/
http://www.feau-immobilier.fr/rent-area.aspx
References :
Parisian.

No house, there's so few of them it's not worth looking for them. Paris is a very dense city with buldings. If you speak French, you can go there:

or to agents:

It has a lot to do with what area you are in. It seems like certain areas accept it while others don't. For instance in Baton Rouge, LA it is unheard of to charge administrative fees at apartments (they do charge application fees however to run credit, etc). In the Dallas area however it is very common and the fees generally range from $75 - $200 depending on the complex and what price point they are at. I'd check other local apartments and see if this is typical of the area.
References :
I am a licensed agent in Louisiana and Texas.

It is a shady, yet legal, way some places operate. Stay away from anyplace that charges more than a modest application fee. They need this to do your credit and criminal history check.
References :
When you make a visit to a particular property website or portal over the Internet then you normally find that the success rates of not all the advertisers remain the same. Have you ever thought why some of the persons (or groups) offering the apartment houses for rent are highly successful in nature, while others are not so?

It is not all about the quality of the rental homes but the way in which they are listed over the Internet. It is advisable for you to follow some of the critical tips in order to acquire more number of useful hits.
References :
http://www.riolocalapartments.com/
